Prepare the Batter

In a large mixing bowl, combine the rice flour, baking powder, and salt. Gradually add the water, whisking until the mixture is smooth and free of lumps. Stir in the chopped green onions.

Heat the Pan

In a non-stick skillet or frying pan, heat 1 tablespoon of vegetable oil over medium heat.

Cook the Pancakes

Pour about 1/4 cup of the batter into the skillet for each pancake. Cook for 3-4 minutes or until bubbles form on the surface and the edges start to lift. Flip and cook for an additional 2-3 minutes until golden brown. Repeat until all batter is used, adding more oil as necessary.

Serve the pancakes warm with the black-eyed bean hummus on the side.

Blend the Ingredients

In a food processor, combine the cooked black-eyed peas, tahini, minced garlic, olive oil, lemon juice, cumin, salt, and water. Blend until smooth and creamy.

Adjust Consistency

If the hummus is too thick, add a little more water, 1 tablespoon at a time, until the desired consistency is reached.

Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika and chopped parsley for garnish.
