In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and minced ginger until the sugar is dissolved.

Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Heat a large skillet or pan over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add it to the hot skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice sear.

In a small bowl, mix cornstarch with water to create a slurry. In the same skillet with the cooked chicken, pour in the reserved marinade and bring it to a simmer. Stir in the cornstarch slurry and cook for an additional 2-3 minutes, or until the sauce thickens.

Slice the chicken and drizzle the thickened teriyaki sauce over the top. Garnish with chopped green onions and toasted sesame seeds. Serve hot over cooked rice.
