Marinate the Chicken
In a large bowl, mix soy sauce, sake, grated ginger, and minced garlic. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Slaw
In another bowl, combine shredded cabbage, julienned carrot, and chopped green onions. In a small bowl, whisk together sesame oil, rice vinegar, sugar, and salt. Pour dressing over the slaw and toss to combine.

Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until water is absorbed. Let it sit covered for 5 minutes, then fluff with a fork.

Fry the Chicken
Heat vegetable oil in a deep frying pan over medium-high heat. Dredge the marinated chicken in cornstarch, shaking off excess. Fry the chicken in batches for about 5-7 minutes or until golden brown and cooked through. Drain on paper towels.

On a plate, create a bed of Asian slaw, add a serving of rice, and top with the fried chicken. Drizzle with additional ginger sauce if desired.
