Method

Preparing the Chicken Filling

    Season and Shred the Chicken

    In a bowl, combine the cooked chicken breast with taco seasoning. Shred the chicken using two forks until it is finely shredded and well coated with seasoning.

    Mix with Cheese

    Add shredded cheese to the seasoned chicken and mix well until the cheese is evenly distributed.

Making the Guacamole

    Prepare the Avocado

    Cut the avocados in half, remove the pit, and scoop out the flesh into a mixing bowl.

    Mash and Mix

    Mash the avocado with a fork until creamy. Stir in lime juice, salt, chopped cilantro, and diced tomato until well combined. Adjust seasoning to taste.

Assembling and Cooking the Quesadilla

    Heat the Tortilla

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one tortilla in the skillet.

    Spread half of the chicken and cheese mixture over one half of the tortilla. Fold the tortilla in half.

    Cook the Quesadilla

    Cook the quesadilla for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

    Repeat

    Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling.

Serving

    Cut the quesadillas into wedges. Serve hot with guacamole, sour cream, and salsa on the side.
