Prepare the Tortillas
Heat a non-stick skillet over medium heat. Add a small amount of olive oil or butter to coat the bottom.

Add Cheese
Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla.

Top with Another Tortilla
Place the second tortilla on top of the cheese-covered tortilla.

Cook the Quesadilla
Cook for about 2-3 minutes until the bottom tortilla is golden brown and the cheese starts melting. Carefully flip the quesadilla using a spatula.

Finish Cooking
Cook for another 2-3 minutes on the other side until golden and the cheese is fully melted. Remove from skillet and let cool for a minute before cutting into wedges.

Mix Ingredients
In a medium bowl, combine the diced tomatoes, chopped red onion, and chopped cilantro.

Season the Salsa
Add lime juice, salt, and jalapeño (if using) to the mixture. Stir well to combine all the flavors.

Let it Rest
Allow the salsa to sit for about 10 minutes for the flavors to meld before serving.
