Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2.5 cups of water in a pot and bring to a boil. Cover, reduce heat to low, and simmer for 18-20 minutes until the water is absorbed.

Season the Rice
Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice.

Choose Your Protein
Select either cooked chicken breast, steak, or shrimp as your protein. If using chicken or steak, make sure to slice it into bite-sized pieces. If using shrimp, ensure they are peeled and deveined.
Assemble Poke Bowl

Layer Ingredients
In a bowl, start with a base of sushi rice. Top it with your chosen protein, followed by diced avocado, halved cherry tomatoes, diced cucumber, sliced red onion, corn kernels, and chopped cilantro.

Drizzle Sauce
In a small bowl, mix soy sauce, sriracha, and sesame oil. Drizzle the sauce over the assembled poke bowl and squeeze lime juice on top.
