Preparation of Rice

    Soak the Rice

    In a large bowl, combine the long-grain white rice and 2 cups of water. Let it soak for at least 3 hours or overnight. This softens the rice, making it easier to blend.

    After soaking, drain the rice and rinse it under cold water to remove excess starch. This step ensures a smoother texture in the final drink.

Blending the Base

    Blend the Rice

    In a blender, combine the soaked rice, 2 cups of fresh water, and the cinnamon stick. Blend on high until the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Use a fine mesh strainer or cheesecloth to strain the blended rice mixture into a large pitcher or bowl. Press down to extract as much liquid as possible. Discard the solids.

Mixing the Beverage

    Combine with Milk and Sweeteners

    To the strained rice water, add 4 cups of milk, 1 cup of sugar, 1 tsp of vanilla extract, and a pinch of salt. Stir well until the sugar is dissolved.

    Refrigerate the horchata for at least 2 hours to allow the flavors to meld and to serve it chilled.

Serving the Horchata
