Method

Preparation of the Cookies

  1. 1

    Mix the Dry Ingredients

In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt until combined.

  2. 2

    Cream the Butter and Sugar

In another bowl, beat the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.

  3. 3

    Add Egg Yolks and Vanilla

Add the egg yolks and vanilla extract to the butter mixture and mix until well combined.

  4. 4

    Combine Mixtures

Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.

  5. 5

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Baking the Cookies

  1. 6

    Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. 7

    Roll and Cut the Dough

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cookie cutter to cut out cookies.

  3. 8

    Bake the Cookies

Transfer the cookies to the prepared baking sheet and bake for 10-12 minutes, or until they are set but not browned.

  4. 9

    Cool the Cookies

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Assembling the Alfajores

  1. 10

    Fill the Cookies

Spread a generous tablespoon of dulce de leche on the flat side of one cookie, then top with another cookie, pressing gently to adhere.

  2. 11

    Dust with Powdered Sugar

Once all cookies are assembled, dust the tops with powdered sugar for garnish.
