Prepare the Filling

In a mixing bowl, combine ground pork, chopped scallions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Fill the Dumplings

Take a gyoza wrapper and place a small spoonful of the filling in the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Create pleats along the edge if desired.

Pan-Fry the Gyoza

Heat a non-stick skillet over medium heat and add a drizzle of oil. Arrange the dumplings in the skillet and fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza

Add about 1/4 cup of water to the skillet, cover with a lid, and let steam for 5-7 minutes until the water evaporates and the dumplings are cooked through.

Serve

Remove the lid and let the dumplings cook for an additional minute to crisp up the bottom. Serve hot with soy vinaigrette sauce.
