1. Prepare the Ingredients

Wash and cut the vegetables into bite-sized pieces. Pat the shrimp dry with a paper towel.

2. Make the Tempura Batter

In a bowl, mix the all-purpose flour and cornstarch. Gradually add ice-cold water until just combined. The batter should be lumpy, do not overmix.

3. Heat the Oil

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

4. Fry the Tempura

Dip the shrimp and vegetables into the batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown (about 2-3 minutes for shrimp and 3-4 minutes for vegetables).

5. Drain and Serve

Remove the tempura from the oil and drain on paper towels. Serve immediately with grated daikon, ginger, and tentsuyu for dipping.
