Preparation Steps
Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the rice cooker instructions. Once cooked, transfer to a large bowl.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Drizzle this mixture over the warm rice and gently fold to combine. Let it cool to room temperature.
Prepare the Tamago
In a bowl, whisk together eggs, a pinch of salt, and a little sugar. Heat a non-stick pan, add a thin layer of oil, and pour a small amount of egg mixture. Cook and roll the omelette, adding more egg mixture to form layers until fully cooked. Slice into thin strips.
Assemble the Chirashi
In a serving bowl, place a generous serving of sushi rice as the base. Arrange the sashimi, tamago slices, and ikura on top of the rice. Garnish with torn nori, sesame seeds, and scallions.
Serve
