Prepare Pork Broth

In a large pot, heat the pork broth over medium heat until simmering. Keep warm.

Cook Ground Pork

In a skillet, heat sesame oil over medium heat. Add minced garlic and ginger, sauté until fragrant. Add ground pork and cook until browned. Stir in miso paste and soy sauce, mixing well.

Prepare Vegetables

Slice the leeks and shiitake mushrooms. Add them to the skillet with the pork mixture and sauté until soft. Set aside.

Cook Noodles

In a separate pot, bring water to a boil. Add the noodles and cook according to package instructions. Drain and set aside.

Blanch Bok Choy

In the same pot of boiling water, add bok choy for about 1-2 minutes until vibrant green and tender. Drain and set aside.

Assemble the Dish

In serving bowls, place a portion of noodles, then ladle the warm pork broth over the top. Add the pork and vegetable mixture, and top with blanched bok choy. Drizzle sesame chili oil and sprinkle sesame seeds on top.
