Prepare the Chicken Strips
Cut the chicken breast into thin strips. In a bowl, mix peanut butter, soy sauce, honey, and lime juice to create a marinade. Marinate the chicken strips for at least 30 minutes.

Cook the Chicken
Heat a skillet over medium-high heat and cook the marinated chicken strips until golden brown and cooked through, about 5-7 minutes. Remove from heat and set aside.

Prepare the Wonton Curls
In a deep pan, heat vegetable oil. Cut wonton wrappers into strips and fry them in hot oil until golden and crispy. Remove and drain on paper towels.

Assemble the Salad
In a large bowl, combine lettuce greens, cherry tomatoes, chopped scallions, shredded carrots, and cheddar cheese. Toss gently to mix.

Top the salad with the crispy chicken strips and fried wonton curls. Drizzle with any remaining peanut sauce if desired and serve immediately.
