Cajun Fried Chicken Biscuit

Prepare the Chicken

In a bowl, combine buttermilk and Cajun seasoning. Add chicken breasts to the mixture and marinate for at least 1 hour in the refrigerator.

Prepare the Biscuit Dough

In a large bowl, mix flour, baking powder, baking soda, salt, and black pepper. Cut in butter until mixture resembles coarse crumbs. Stir in milk until just combined.

Bake the Biscuits

Preheat your oven to 450°F (230°C). Roll the biscuit dough on a floured surface and cut into rounds. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

Fry the Chicken

In a deep skillet, heat vegetable oil over medium-high heat. Dredge marinated chicken in a mixture of flour and cornstarch seasoned with salt and pepper. Fry chicken for 5-7 minutes on each side until golden brown and cooked through. Drain on paper towels.

Make Pepperjack Cheese Sauce

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth. Add pepperjack cheese and stir until melted and creamy.

Prepare the Rosemary Potatoes

Dice potatoes and boil in salted water until tender. Drain and toss with olive oil, rosemary, salt, and pepper. Sauté in a skillet until crispy.

Assemble the Dish

Split the baked biscuits, place a piece of fried chicken on each biscuit, and top with pepperjack cheese sauce. Serve with rosemary breakfast potatoes on the side.
