Prepare the Grits

In a large saucepan, bring water to a boil. Stir in grits and a pinch of salt. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally until thickened. Mix in butter and cheddar cheese until melted and creamy. Set aside.

Cook the Bacon

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pan.

Sauté the Shrimp

In the same skillet, add shrimp and season with Cajun seasoning, salt, and pepper. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove shrimp and set aside.

Combine Ingredients

In the same skillet, add garlic, tomatoes, and scallions. Sauté for 3-4 minutes until softened. Pour in lobster broth and bring to a simmer. Stir in cooked shrimp and bacon, cooking until warmed through. Adjust seasoning if necessary.

Serve

To serve, spoon creamy cheddar grits onto plates and top with the Cajun shrimp mixture. Garnish with fresh parsley.
