    Prepare the Cheese Sauce

    In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring continuously until the mixture thickens. Remove from heat and stir in the Asiago cheese until melted and smooth.

    Prepare the Toppings

    In a bowl, combine diced tomatoes, sliced scallions, sliced kalamata olives, and sliced banana peppers. If using chicken, black beans, or chorizo, prepare them in advance and have them ready to add.

    Assemble the Nachos

    On a large serving platter, spread the pasta chips evenly. Pour the cheese sauce over the chips, followed by the prepared toppings: tomatoes, scallions, olives, banana peppers, and your choice of chicken, black beans, or chorizo. Finally, sprinkle the shredded mozzarella cheese on top.

    Preheat the oven to 180°C (350°F). Bake the assembled nachos for about 10-15 minutes, or until the cheese is bubbly and golden.
