Rosemary Baked Salmon With New Potatoes* Recipe

A baked rosemary and olive oil marinated salmon with grilled asparagus served over three cheese new potatoes. Finished with a sweet tarragon aioli.

    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, fresh rosemary, salt, and black pepper. Coat the salmon fillets with this mixture and marinate for at least 30 minutes.

    Boil the Potatoes

    Place new potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Mix the Cheeses

    In a mixing bowl, mash the boiled potatoes and blend in cream cheese, cheddar cheese, and parmesan cheese until smooth. Season with salt and pepper to taste.

    Bake the Salmon

    Preheat the oven to 200°C (400°F). Place marinated salmon on a baking sheet and bake for 15-20 minutes, or until cooked through and flaky.

    Grill the Asparagus

    While the salmon is baking, toss asparagus with olive oil, salt, and pepper. Grill on a hot grill or grill pan for about 5-7 minutes until tender.

    Make the Tarragon Aioli

    In a small bowl, mix mayonnaise, chopped tarragon, and lemon juice. Season with salt and pepper.

    On a plate, serve a generous spoonful of three cheese potatoes topped with the baked salmon and grilled asparagus. Drizzle with tarragon aioli.
