Prepare Cheese Sauce
In a saucepan over medium heat, combine the pepper jack cheese and heavy cream. Stir continuously until the cheese is melted and the mixture is smooth. Remove from heat and set aside.

Assemble Nachos
On a large baking sheet, spread the pasta chips evenly. Layer the pulled pork over the chips, followed by the diced tomatoes, chopped scallions, sliced banana peppers, and shredded mozzarella cheese.

Add Cheese Sauce and BBQ Sauce
Drizzle the prepared pepper jack cheese sauce over the nacho layers, then drizzle with BBQ sauce to taste.

Bake
Preheat the oven to 350°F (175°C). Bake the nachos in the oven for about 10-15 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes. Serve hot, garnished with additional scallions or banana peppers if desired.
