Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into long strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel to remove moisture.

Heat the Oil
In a large deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a few potato strips to the hot oil, making sure not to overcrowd the pan. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Use a slotted spoon to remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt, pepper, and garlic powder to taste.

Serve the French fries hot, with your favorite dipping sauces.
