Preparation

Prepare the Chicken
In a bowl, mix the cajun seasoning with flour, salt, and pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Bread the Chicken
Dip each chicken breast first in the flour mixture, then in the eggs, and finally in the breadcrumbs, pressing to adhere.

Cook the Chicken
Heat olive oil in a skillet over medium heat. Add the breaded chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through.

Make the Slaw
In a large bowl, combine the shredded cabbage, carrots, and mayonnaise. Mix well and set aside.

Prepare the Chipotle Cream
In a small bowl, mix mayonnaise with minced chipotle pepper in adobo sauce until well combined.

Assemble the Sandwich
Toast the kaiser rolls. Place the cooked chicken on the bottom half of each roll, top with spicy slaw and pickle slices, and drizzle with chipotle cream before placing the top half of the roll.
