    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

    Prepare the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet, scramble the eggs until fully cooked. Set aside.

    Make the Asiago Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth. Stir in asiago cheese until melted and creamy. Season with salt and pepper to taste.

    Assemble the Croque-Monsieur

    Spread Dijon mustard on one side of each slice of focaccia. Layer two slices with scrambled eggs, bacon, and gruyere cheese. Top with remaining focaccia slices.

    Place the assembled sandwiches on a baking sheet. Pour the asiago cheese sauce over the top and sprinkle with mozzarella cheese. Bake at 375°F (190°C) for 15-20 minutes until golden brown.
