Caramelized Onions and Assembly

    Caramelize the Onions

    In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

    Prepare the Au Jus

    In a saucepan, combine the reserved broth, roasted garlic (squeezed out of the head), and port wine. Simmer until slightly reduced, about 10 minutes.

    Assemble the Sandwiches

    Slice the hoagie rolls and fill each with shredded pot roast, topped with caramelized onions and Swiss cheese. Place under a broiler for 2-3 minutes until the cheese is melted.
