    Prepare the Onions

    Slice the onion into thin rings. In a skillet, melt half the butter over medium heat. Add the onions and sauté until they are caramelized, about 10-15 minutes. Stir in the fresh thyme and season with salt and pepper. Remove from heat and set aside.

    Cook the Burger

    Form the ground beef into a patty and season both sides with salt and pepper. In the same skillet, add the remaining butter and increase the heat to medium-high. Cook the burger for about 4-5 minutes on each side for medium-well, or until it reaches your desired doneness.

    Assemble the Patty Melt

    Spread garlic aioli on one side of each slice of whole wheat bread. Place the cooked burger on one slice, top with caramelized onions and Provel cheese. Cover with the second slice of bread, aioli side down.

    Grill the Sandwich

    In the skillet, grill the sandwich over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

    Remove from the skillet, slice in half, and serve hot.
