Cheesecake Filling

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    Make the Filling

    In a large mixing bowl, beat together the cream cheese and sugar until smooth. Add the eggs one at a time, then mix in the sour cream, vanilla extract, and crushed pineapple (drained). Mix until combined.

    Combine and Bake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour.

    Cool and Serve

    Remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before removing from the springform pan and slicing.
