    Prepare the Onions

    Slice the onions thinly and set aside.

    Cook the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions, and cook, stirring frequently, until caramelized, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the dry white wine, scraping up any browned bits from the bottom of the pot. Cook for an additional 5 minutes.

    Simmer the Soup

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into 1-inch thick slices and toast them until golden.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into bowls, place toasted baguette slices on top, and sprinkle with Gruyère cheese. Broil in the oven until the cheese is bubbly and golden.
