Prepare the Meatballs
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined. Roll mixture into small meatballs, about 1 inch in diameter.

Sauté the Vegetables
In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté until vegetables are tender, about 5-7 minutes.

Cook the Meatballs
Add the meatballs to the pot and brown them on all sides for about 5 minutes.

Add Broth and Tomatoes
Pour in the chicken broth and add the canned diced tomatoes. Bring the mixture to a boil, then reduce heat to a simmer.

Let the soup simmer for about 20 minutes, allowing the flavors to meld and the meatballs to cook through.

Stir in the fresh spinach and cook for an additional 5 minutes until wilted.
