    Peel the onions and slice them into 1/2 inch thick rings. Separate the rings and set aside.

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat and Fry the Onions

    Dip each onion ring into the batter, allowing excess to drip off. Carefully place the rings into the hot oil and fry in batches until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
