Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Carefully add a handful of fries to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 4-5 minutes. Use a slotted spoon to remove the fries and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt to taste and toss with freshly grated Parmigiano Reggiano.

Add Truffle
Shave fresh truffle over the fries (to taste) for an aromatic finish. Serve immediately.
