Fusillone Bolognese is a hearty Italian pasta dish featuring thick, spiral fusillone pasta coated in a rich meat sauce made from ground beef and San Marzano tomatoes. This version is characterized by the use of Northern Gold beef, which adds a distinct richness, and the texture of fusillone allows for perfect sauce adherence. Here's how to prepare it at home.

Fusillone Bolognese

Method

Preparation

1

Cook the pasta

Bring a large pot of salted water to a boil. Add the fusillone pasta and cook according to package instructions until al dente. Drain and set aside.

2

Prepare the Bolognese sauce

In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté for about 5-7 minutes until vegetables are soft and translucent.

3

Add the beef

Increase heat to medium-high and add the ground Northern Gold beef to the pan. Cook until browned, breaking it apart with a spoon.

4

Deglaze with wine

Pour in the red wine, scraping the bottom of the pan to deglaze. Let it simmer for 2-3 minutes until the wine reduces slightly.

5

Add tomatoes and season

Stir in the crushed San Marzano tomatoes, minced garlic, salt, and black pepper. Reduce heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally.

6

Combine pasta and sauce

Once the sauce has thickened, add the cooked fusillone pasta to the sauce. Toss to combine, ensuring the pasta is well coated.

7

Serve

Serve hot, garnished with grated Parmigiano Reggiano and fresh basil leaves.
