Chicken Preparation

1. Marinate the Chicken

In a bowl, combine olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

2. Grill the Chicken

Preheat the grill. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked. Set aside to rest.

Polenta Cake Preparation

3. Cook the Polenta

In a pot, bring water to a boil. Gradually whisk in the polenta and cook on low heat, stirring frequently, until thickened (about 30 minutes). Stir in parmesan cheese, butter, and salt.

4. Set and Slice

Spread the polenta in a greased dish and let cool completely. Once set, cut into squares and pan-fry in olive oil until crispy on both sides.

Porcini Jus Preparation

5. Prepare the Jus

Soak the dried porcini mushrooms in hot water for 20 minutes. Drain and finely chop. In a saucepan, heat olive oil, add shallots, and sauté until translucent. Add chopped mushrooms and thyme, then pour in chicken stock. Simmer until reduced by half.

Vegetable Preparation

In a skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and pepper, and sauté until tender, about 5-7 minutes.

On a plate, place the crispy polenta cake, top with grilled chicken breast, drizzle with porcini jus, and serve alongside sautéed vegetables.
