Pasta

Method

Pasta Preparation

  1. 1

    Make the Pasta Dough

In a large bowl, combine the all-purpose flour and salt. Create a well in the center, crack the eggs into the well, and using a fork, gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

  2. 2

    Roll Out the Pasta

After resting, divide the dough into quarters. Roll each quarter out using a pasta machine or a rolling pin until thin. Cut into your desired pasta shape, such as fettuccine or tagliatelle.

Truffle Sauce Preparation

  1. 3

    Prepare the Sauce

In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and cook until melted and smooth. Season with salt and black pepper to taste. Grate the fresh black truffle on top of the sauce, reserving some for garnish.

Combine and Serve

  1. 4

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the fresh pasta and cook for about 2-3 minutes until al dente. Drain the pasta and toss it with the truffle sauce. Serve immediately, garnished with additional grated truffle and chopped parsley.
