Making the Pasta

Knead the Dough
Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Pasta
After resting, roll out the dough using a pasta machine or rolling pin to your desired thickness. Cut into rigatoni shapes using a pasta cutter.
Cooking the Sauce

Cook the Guanciale
In a large skillet over medium heat, cook the guanciale until crispy, about 5-7 minutes. Remove from heat and set aside, leaving the fat in the pan.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the fresh rigatoni and cook until al dente, about 2-3 minutes. Reserve some pasta water before draining.

Combine Pasta and Sauce
In the skillet with guanciale, add the drained pasta and toss to combine. Gradually add the grated Pecorino Romano and a splash of reserved pasta water to create a creamy sauce.

Season and Serve
Season with black pepper to taste. Serve immediately with extra Pecorino Romano on top.
