Gnocchi

Tomato Sauce

Method

Gnocchi Preparation

  1. 1

    Boil the Potatoes

Peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes, allow them to cool slightly, and then mash until smooth and fluffy.

  3. 3

    Make the Dough

In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.

  4. 4

    Shape the Gnocchi

Divide the dough into smaller portions and roll each into a long rope. Cut into small pieces, then shape each piece with a fork to create ridges.

Tomato Sauce Preparation

  1. 5

    Cook the Garlic

In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 6

    Add Tomatoes

Pour in the San Marzano tomatoes, breaking them up with a spoon. Season with salt and pepper.

  3. 7

    Simmer the Sauce

Let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil during the last few minutes.

Final Assembly

  1. 8

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-4 minutes.

  2. 9

    Combine Gnocchi and Sauce

Drain the gnocchi and toss with the prepared tomato sauce until well coated. Serve hot, garnished with additional basil if desired.
