Steak Preparation

    Season the Steak

    Pat the flat iron steak dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest.

Porcini Jus Preparation

    Rehydrate Porcini Mushrooms

    Soak the dried porcini mushrooms in warm water for about 20 minutes until soft. Drain and chop finely.

    Make the Jus

    In a saucepan, sauté the diced shallots in butter until translucent. Add the chopped porcini and red wine, and reduce by half. Add the beef stock and simmer until the sauce thickens. Strain and season with salt and pepper.

French Fried Potatoes Preparation

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry.

    Fry the Potatoes

    In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Assembly

    Serve

    Slice the rested steak against the grain. Plate the steak alongside the French fried potatoes and drizzle with porcini jus.
