    Prepare the Venison

    Trim any excess fat from the venison loin and cut it into medallions about 1 inch thick. Season both sides generously with salt and black pepper.

    Sear the Medallions

    In a large skillet, heat olive oil over medium-high heat. Add the venison medallions and sear for about 3-4 minutes on each side until they are browned and cooked to your desired doneness. Remove from the skillet and set aside.

    Make the Gorgonzola Crust

    In a bowl, combine the crumbled Gorgonzola cheese, chopped parsley, minced garlic, and breadcrumbs. Mix until well combined.

    Broil the Medallions

    Preheat the broiler. Place the seared venison medallions on a baking sheet. Top each medallion with the Gorgonzola mixture, pressing it down slightly.

    Finish Cooking

    Broil the medallions in the oven for about 2-3 minutes, or until the cheese is melted and golden. Be careful not to burn.

    Remove from the oven and let rest for a minute. Serve warm, drizzled with melted butter and additional parsley if desired.
