Prepare the Spinach Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.

Mix the Filling

In a bowl, combine the cooked spinach, cream cheese, dried thyme, dried oregano, salt, black pepper, and half of the grated Parmesan cheese. Mix until well combined.

Prepare the Chicken

Preheat the oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to cut all the way through.

Stuff the Chicken

Stuff each chicken breast with the spinach mixture, using toothpicks to secure the openings if necessary.

Cook the Chicken

Heat the remaining tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.

Bake

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serve

Remove from the oven and let rest for a few minutes. Sprinkle with the remaining Parmesan cheese before slicing and serving.
