Prepare the Chicken
Pound the chicken breasts to an even thickness. Season both sides with salt and black pepper.

Breading the Chicken
Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and a mixture of bread crumbs and grated Romano cheese in the third. Dredge each chicken breast in flour, dip in egg, and coat with the breadcrumb mixture.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a paper towel to drain excess oil.

Cook the Spaghetti
While the chicken is cooking, boil a pot of salted water and cook spaghetti according to package instructions until al dente. Drain and set aside.

Assemble the Dish
In the last minute of cooking the chicken, place a slice of fresh mozzarella on each breast and cover the skillet to melt the cheese. Serve the crispy chicken topped with pomodoro sauce over a bed of spaghetti. Garnish with fresh basil.
