Prepare the mixture

In a large bowl, combine the Dungeness crab meat, chopped wild prawns, panko breadcrumbs, mayonnaise, chopped parsley, minced garlic, lemon juice, beaten egg, salt, and black pepper. Mix gently until all ingredients are well incorporated.

Form the croquets

Using your hands, form the mixture into small patties or cakes, about 2 inches in diameter. Place them on a plate and refrigerate for about 30 minutes to help them firm up.

Fry the croquets

In a large skillet, heat olive oil over medium heat. Once hot, carefully add the crab croquets to the skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Serve

Once cooked, remove the croquets from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm, drizzled with pistachio aioli.
