Prepare the Rice

In a saucepan, bring the chicken or vegetable broth to a boil. Stir in the Arborio rice and a pinch of salt. Reduce heat to low, cover, and cook for about 20 minutes, or until the rice is tender and the liquid is absorbed. Allow to cool slightly.

Mix the Filling

In a large bowl, combine the cooked rice, diced prawns, Parmesan cheese, beaten egg, garlic, parsley, salt, and black pepper. Mix until well combined.

Form the Arancini

Take a small handful of the rice mixture and form it into a ball, about the size of a golf ball. Roll it in flour, then dip it in beaten egg, and finally coat it with breadcrumbs. Repeat with the remaining mixture.

Fry the Arancini

Heat the olive oil in a deep pan over medium heat. Fry the arancini in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
