Soak the catfish fillets in buttermilk for at least 30 minutes to enhance flavor and tenderness.

Mix the Coating
In a large bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper to create the coating mixture.

Dredge the Fillets
Remove catfish from buttermilk, allowing excess to drip off. Dredge each fillet in the coating mixture, ensuring an even coat.

Heat the Oil
In a large skillet or deep fryer, heat oil to 350°F (175°C).

Fry the Catfish
Carefully place the coated fillets in the hot oil, frying in batches if necessary. Cook for 4-5 minutes on each side, or until golden brown and cooked through.
