1. Marinate the Chicken
In a bowl, combine the chicken breast, shawarma spice mix, olive oil, minced garlic, yogurt, salt, and pepper. Mix well, ensuring the chicken is fully coated. Cover and let marinate for at least 1 hour in the refrigerator.
2. Cook the Chicken
Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked. The internal temperature should reach 75°C (165°F). Remove from heat and let rest for a few minutes before slicing.
3. Prepare the Vegetables
While the chicken is resting, wash and chop the cucumber, tomato, red onion, and parsley into small pieces. In a bowl, combine the chopped vegetables with lemon juice and a pinch of salt.
4. Assemble the Shawarma
Lay out a piece of lavash bread and place a portion of sliced chicken in the center. Top with the vegetable mixture. Roll the lavash tightly, folding in the sides as you go to secure the filling. Repeat with the remaining ingredients.
5. Serve
Cut the wrapped shawarma in half and serve with extra yogurt or your favorite sauce.
