1. Prepare the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

2. Add the Vegetables

Add the diced red bell pepper, zucchini, and eggplant. Cook, stirring occasionally, for about 5-7 minutes until they begin to soften.

3. Incorporate Tomatoes and Olives

Stir in the cherry tomatoes and Kalamata olives. Cook for another 5 minutes, allowing the tomatoes to release their juices.

4. Finish with Cheese and Herbs

Remove from heat and stir in crumbled feta cheese, chopped basil, lemon juice, salt, and black pepper to taste.
