1. Prepare the Chickpeas
Rinse and soak the chickpeas in water overnight. Drain and rinse before cooking.
2. Cook the Chickpeas
Place the soaked chickpeas in a pot, cover with water, and boil for 1-2 hours until tender. Drain and reserve some cooking liquid.
3. Make the Tahini Sauce
In a bowl, combine tahini, minced garlic, lemon juice, olive oil, cumin, and salt. Mix until smooth. Add reserved chickpea cooking liquid to thin if necessary.
4. Combine Ingredients
In a large mixing bowl, combine the cooked chickpeas with the tahini sauce. Mix well to coat the chickpeas.
5. Garnish
Transfer to a serving dish and drizzle with olive oil, sprinkle paprika and fresh parsley on top before serving.
