    Prepare the Dough

    Soak the cracked wheat in water for about 30 minutes until it softens. Drain and squeeze out excess water. In a bowl, combine the soaked wheat with half of the ground meat, salt, black pepper, and allspice. Knead until a smooth dough forms.

    Prepare the Filling

    In a skillet, heat a little olive oil over medium heat. Sauté the chopped onion until translucent. Add the remaining ground meat, pine nuts, cinnamon, salt, and pepper. Cook until the meat is browned and cooked through. Set aside to cool.

    Form the Kibbeh

    Take a small ball of the dough and flatten it in your hand. Place a spoonful of the meat filling in the center and carefully fold the dough over the filling to form an oval shape. Seal the edges well.

    Fry the Kibbeh

    Heat olive oil in a deep skillet over medium heat. Fry the kibbeh in batches until golden brown on all sides. Remove and drain on paper towels.

    Serve

    Serve hot with yogurt or a salad on the side.
