Falafel and Mixed Vegetables

Method

Preparation and Cooking Instructions

  1. 1

    Prepare the Falafel Mixture

In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Blend until the mixture is coarse but well combined. Transfer to a bowl and refrigerate for 30 minutes.

  2. 2

    Shape the Falafel

After chilling, shape the mixture into small balls or patties, about the size of a golf ball.

  3. 3

    Fry the Falafel

Heat the vegetable oil in a deep pan over medium heat. Once hot, gently place the falafel balls into the oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

  4. 4

    Prepare the Mixed Vegetables

In a separate pan, heat olive oil over medium heat. Add the mixed vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.

  5. 5

    Serve

Serve the crispy falafel warm alongside the sautéed mixed vegetables, drizzling with lemon juice before serving.
