Preparing Blinis

Cook Potatoes

Boil the Yukon Gold potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Mash Potatoes

Peel the potatoes and mash them in a bowl until smooth.

Mix Ingredients

In a mixing bowl, combine the mashed potatoes, flour, baking powder, salt, egg, and milk. Mix until just combined.

Cook Blinis

Heat butter in a non-stick skillet over medium heat. Pour small amounts of batter into the skillet to form blinis. Cook until bubbles form on the surface, then flip and cook until golden, about 2-3 minutes per side.

Prepare Eggs

Finely sieve the hard-boiled eggs to create a smooth texture.

Top Blinis

Spread a dollop of crème fraîche on each blini, followed by a spoonful of sieved egg. Top with a small amount of Tsar Nicoulai caviar and garnish with chopped chives.
