Method

Cooking the Steak

    Prepare the Steak

    Season the New York strip with salt and black pepper on both sides. Let it rest at room temperature for about 30 minutes.

    Cook the Steak

    Heat olive oil in a skillet over high heat. Once hot, add the steak. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove and let it rest for 10 minutes.

Making the Frites

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Soak in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Assembling the Dish

    Prepare Heirloom Tomato Carpaccio

    Slice heirloom tomatoes thinly and arrange them on a plate. Drizzle with olive oil and balsamic vinegar. Sprinkle with fresh basil.

    Plate the Dish

    Slice the rested steak and place it on the plate next to the tomato carpaccio. Add a generous amount of bordelaise sauce and bearnaise sauce on the steak. Serve with frites on the side.
