Quiche Preparation

Make the Crust

In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water until the dough comes together. Press into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Preheat Oven

Preheat the oven to 375°F (190°C).

Cook the Bacon and Leeks

In a skillet, cook the bacon until crispy. Remove, drain on paper towels, and crumble. In the same skillet, sauté the sliced leeks in the bacon fat until soft.

Combine Filling Ingredients

In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg. Stir in the cooked bacon, leeks, and Gruyère cheese.

Assemble the Quiche

Roll out the chilled dough and fit it into a pie dish. Pour the filling into the crust and bake for 30-35 minutes, or until the filling is set and the top is golden.

Make the Salad

In a large bowl, toss the mixed greens with olive oil, apple cider vinegar, salt, and pepper to taste. Serve alongside the quiche.
