Cooking Instructions

  1. 1

    Prepare the shrimp

In a bowl, combine the shrimp, turmeric, habanero, salt, and black pepper. Toss until the shrimp are evenly coated. Let it marinate for 15 minutes.

  2. 2

    Char the avocado

While the shrimp is marinating, heat a grill or skillet over medium-high heat. Brush the cut side of the avocado with olive oil and place it cut-side down on the grill. Cook for about 3-4 minutes until grill marks appear and the avocado is slightly charred. Remove and set aside.

  3. 3

    Cook the shrimp

In the same skillet or on the grill, add a bit more olive oil if necessary. Cook the marinated shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat.

  4. 4

    Prepare the dill oil

In a small bowl, combine the chopped dill with a tablespoon of olive oil. Stir well to create a dill oil.

  5. 5

    Assemble the dish

On a serving plate, place the charred avocado halves. Fill each half with the cooked shrimp and top with diced kiwi. Drizzle dill oil over the top before serving.
