1. Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and dry the baby potatoes, then cut them in half.

2. Season the Potatoes

In a large bowl, toss the halved potatoes with olive oil, salt, black pepper, and chopped rosemary until evenly coated.

3. Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, tossing halfway through.

4. Prepare the Scallion Crema

In a small bowl, mix together the sour cream, chopped scallions, and lemon juice. Season with salt and pepper to taste.

5. Serve

Once the potatoes are done roasting, remove them from the oven and sprinkle with grated mizithra cheese. Serve hot with scallion crema on the side.
